Russian-style pancakes

Ingredients (serves 3-4):

  • 300 ml milk
  • 3 eggs
  • 100 g flour
  • 30 g sugar
  • 35 g melted butter

Method:

  1. Combine eggs, sugar and milk. Then add flour and butter, and mix well (a blender can be used for this step).
  2. Fry in a shallow pan until the pancake edges are crisp, then turn over.
  3. Serve with a selection of fillings: smoked salmon, sour cream, different jams and honey. If you need some Russian kitsch try pancakes with caviar!
  4. The best way to enjoy them is with good black tea!
