Sweet Fried Apple Wantan

Ingredients (serves 4):

  • 30 dumpling skins (the circular ones)
  • 3 medium-size apples (make sure they are sweet) chopped into small pieces
  • 1 tbsp. butter
  • 1/2 tsp. of ground cinnamon
  • 1 to 2 tsp. of sugar
  • 1 tsp. cornstarch
  • Ground nutmeg
  • Salt
  • 1 tsp. of lemon juice
  • 1 tsp. of castor sugar for topping

Method:

  1. Place butter in a sauté pan on medium high heat and allow to melt.
  2. Add apples and cook until soft.
  3. Mix water and corn starch in a small bowl.
  4. Add cornstarch, sugar, cinnamon, nutmeg, lemon juice and salt to the pan. Mix well.
  5. Remove from the heat and let it cool.
  6. Place about a teaspoon of apple mix on a wonton wrapper.
  7. Fold circle in half and crimp the wontons closed.
  8. Carefully add dumplings to pan, cook until golden brown.
  9. Top with powdered sugar.

Ddukbokkie (Hot and Spicy Rice and Fish Cake)

Ingredients (serves 4):

  • 500g of cylinder-shaped Korean rice cake (Dduk)
  • 2 pkg. of fish tofu
  • 2 pkg. of fish meatballs
  • Broth
  • 1.5 l of water
  • 7 large dried anchovies
  • 10 x 15 cm of dried kelp
  • 1 cube of vegetable stock
  • 1 medium size onion, cut into 4

Seasoning:

  • 30 to 70g Korean hot pepper paste (Gochujang)
  • 1 to 3 tbsp. of Korean hot pepper flakes
  • 1 tbsp. of sugar
  • 1/2 tbsp. of honey
  • 3 large spring onions, chopped into 7-8 cm long pieces
  • 1 tsp. of sesame-seed oil

Method:

1. Prepare the broth

  • Add water, dried kelp and onion to a shallow pot or pan.
  • Boil for 15 minutes over medium high heat without the lid.
  • Add anchovies.
  • Simmer gently for another 15 minutes

2. Add the seasoning

  • Combine hot pepper paste, hot pepper flakes, sugar, soya sauce and honey in a bowl.
  • Remove the anchovies, onion, and kelp from the pan.
  • Add the combined seasoning to the pan, stir gently.

3. Add the fish cake

  • Add the fish tofu and fish meatballs to the pan.
  • Stir gently, and simmer for about 20 minutes.

4. Add the rice cake

  • Add the rice cake to the pan.
  • Add spring onion to the pan.
  • Stir gently and keep stirring until the rice cake has softened. This will take about 15 to 20 minutes.
  • Finish with the sesame oil
  • Remove from the heat and drizzle with sesame-seed oil.
