Won-ton Soup
Ingredients (serves 4):

250 g ground pork

5 spring onions

3 tsp. soy sauce

3 g sesame-seed oil

won-ton wrappers (available in Asian specialty shops)

Method:

To prepare the filling, combine the chopped spring onions, minced meat, salt, soy sauce and sesame-seed oil in a bowl and mix well. Then stir the mixture in one direction for 1 minute with a wooden spoon.

Place a tablespoonful of the filling in the middle of each wonton wrapper, moisten the edges with a little water, fold the wrapper to form roughly rectangular shape, then bring opposite corners together and seal by pinching them together.

Bring a pot of salted water to the boil. Add the won-tons, stirring occasionally. When they have risen to the surface, continue cooking for another minute.

Pour off the water, and serve the won-tons in a hot chicken broth with chopped coriander.
