Ingredients (serves 8-10):

Grilled Pork Kebabs:

  • 2 kg pork belly
  • 2 cups Coca-Cola
  • 1 1/2 cups ketchup
  • 1 cup brown sugar (cane sugar)
  • 1/2 cup soy sauce
  • 1/2 cup vinegar (if possible “Datu Puti” from the Philippines, available from specialty shops)
  • 2 tsp. finely chopped garlic
  • 1 medium-sized onion
  • 3 tsp. salt
  • Black pepper, to taste

  • Combine the components of the marinade in a small bowl and mix well.
  • Cut the meat into 2- to 3-cm cubes.
  • Place bamboo (or other wooden) skewers in water for at least 30 mins (or overnight) to prevent them from charring on the grill.
  • Thread the meat cubes onto the skewers and marinate overnight. (Any left-over marinade intended for later should be boiled and stored in the freezer.)
  • Grill the kebabs on the barbecue, basting them occasionally with the marinade.
  • Serve with the sauce.
